Safety of Chitin and Chitosan for Food and Pharmacetutical Uses

Abstract
Chinin is the second most plentiful natural polymer. Currently, chitin and chitosan are manufactured commercially in large scale from crab and shrimp shell as fish processing waste. They is being used in many commercial application because of their various functional properties. Chitosan, in particular, is being evaluated as biomedical materials in a number of food and fields. Among all published reports until now, specially, no toxity for chitin intake as food additives have been reported. And chitosan also showed very desirable effects for a proper concentration of administration. However, when administrating large concentrations to various animals, some harmful side effects were found. In particular, when chitosan more than 50 mg/kg was injected against ,a dog, the number of leukocytes, chemiluminescence(CL) response and CL index were rapidly decreased. But the administrations of chitosan oligosaccharides and D-glucosamine were observed no change. In this review, their safeties will be discussed for the uses in food and pharmacetutical fields with various results reported until now
